What Is Sucrose Used For?
In the carbohydrate practical, a sucrose solution heated with Benedict's or Fehling's reagent stays blue, because sucrose has no free reducing group. Boiling a second portion with dilute acid splits it into glucose and fructose; after neutralising, the same test turns brick red. Running both tubes side by side, with a glucose tube as a positive control, is one of the clearest ways to teach the difference between reducing and non-reducing sugars.
Sucrose is equally useful in plant physiology. Solutions of increasing strength are used to show osmosis in potato strips or a thistle-funnel osmometer, and to demonstrate plasmolysis in onion or Rhoeo peel under the microscope, making it a staple next to plant biology lab equipment such as osmosis apparatus.
