Fehling B conventionally contains potassium sodium tartrate (Rochelle salt) in sodium hydroxide solution. When it is mixed with the copper sulfate of Fehling A, the tartrate holds the copper in a soluble deep-blue complex instead of letting it fall out as copper hydroxide, and the alkali provides the conditions for a sugar to reduce it. Students can then compare glucose, fruit juice, honey, milk or a sucrose solution by watching which ones form a brick-red precipitate on heating.
Because it is strongly alkaline, Fehling B is corrosive to skin and eyes, so it should be dispensed by staff or under close supervision, with goggles and gloves.
