Iodine barely dissolves in plain water, but it dissolves readily in potassium iodide solution because the iodide ion combines with iodine to form the soluble triiodide ion. That is why potassium iodide is the base of the iodine solution used in the starch test on food samples and leaves. In volumetric analysis it releases iodine from oxidising agents, and the liberated iodine is then titrated with sodium thiosulfate using starch as the indicator.
In qualitative work, potassium iodide solution added to a lead salt gives a bright yellow lead iodide precipitate that redissolves in hot water and reappears as glittering crystals on cooling, a popular classroom demonstration. With silver nitrate it forms pale yellow silver iodide. Store the crystals in a tightly closed, dark bottle, because iodide slowly oxidises in light and moist air and turns yellow-brown.
