Iodine barely dissolves in water on its own, so for the starch test it is first dissolved in potassium iodide solution to give the familiar brown iodine solution. A drop on bread, potato or a decolourised leaf turns blue-black where starch is present, the basis of food tests and the leaf-starch photosynthesis experiment. Many biology and chemistry departments in India make their own iodine solution for lab use from the crystals in exactly this way.
Gently warming a few crystals in a dry beaker covered with a cold watch glass shows sublimation: violet vapour rises and grey-black crystals form again on the cool glass. Iodine also dissolves in non-polar solvents such as hexane with a violet colour and is titrated with sodium thiosulfate in redox analysis. The vapour irritates eyes and lungs and the solid stains and can burn skin, so sublime it only in a fume cupboard, move crystals with a spatula and keep the bottle tightly closed.
