Ethanoic anhydride transfers an ethanoyl (acetyl) group to alcohols, phenols and amines. Its main teaching use is the synthesis of aspirin from salicylic acid, where it is preferred to ethanoic acid because the reaction goes much further towards completion and the by-product is simply ethanoic acid. In college organic courses it is also used to acetylate phenylamine (aniline), a standard acylation followed by recrystallisation of the product.
The reagent reacts with water to form ethanoic acid, so keep the bottle tightly closed and use dry glassware.
