In fact it dissociates into ammonia and hydrogen chloride, which recombine as they cool, so the demonstration illustrates both sublimation and a reversible reaction. The same behaviour lets students separate it from a mixture with common salt or sand.
Warmed with calcium hydroxide, ammonium chloride releases ammonia, detected by its smell and by moist red litmus turning blue; this is the standard school preparation of the gas and the basis of the test for ammonium ions.
